Oatmeal Cookie Recipe for Diabetics

We all love holiday cookies, and one of the traditional favorites besides chocolate chip and Snickerdoodle is oatmeal raisin cookies. Overindulgence tends to be a theme during this season. It can especially be an issue for those with diabetes. Being mindful of glucose readings during the holidays, it is important to monitor the sugar intake.

This recipe allows those with diabetes to join in the festivities without feeling the least bit left out.

The Ingredients:

2 Cups rolled oats

3 Ripe bananas, mashed

1/3 Cup applesauce

1/2 Cup raisins

1/4 Cup almond milk

1 Teaspoon vanilla extract

1 Teaspoon ground cinnamon


In a medium-sized bowl, combine all of the ingredients and mix well. On a baking sheet coated in cooking spray, drop small golf ball sized spoonfuls onto the baking sheet. Set the oven to bake at 350° and time for 15 minutes or until lightly browned. This recipe will give you 2-1/2 dozen cookies.

If these are being served at a get-together or party it would be a nice touch to add a place card with the nutritional information to set next to the serving tray.
