This fall favorite “Winter Carrot Soup” has the winning combination of potent anti-inflammatory spices and vegetables to kick your health into gear while power packing your lunch or dinner with a savory punch.
This soup is loaded with fiber, vitamins, and minerals. Vegetables in the form of soups are very easily digestible.
4 Cloves of Garlic
2 Tsp. Coconut Oil
3 Cups of vegetable broth
1 Tsp. Turmeric
1” section of ginger
1 Tablespoon of Lemon Juice
1 Pinch of Cayenne Pepper
Garnish with Greek yogurt or Sour Cream
- Preheat your oven.
- Spray a cooking sheet with non-stick oil. Chop up carrots, parsnip, onion, and garlic. Season with turmeric, cayenne, and drizzle with the coconut oil.
- Roast for 15 minutes.
- Place all veggies as well as broth, lemon juice and ginger (also chopped up) into a blender and blend until all chunks are gone.
- Pour into bowls, garnish with parsley and either greek yogurt or sour cream, stir only lightly to make light white swirls for decoration. You may also add coconut flakes!
This is sure to be a hit and when eaten regularly and in conjunction with a healthy anti-inflammatory diet and lifestyle choices, you will feel a positive change!
